I wrote about a charity bake I did recently in my previous blog post, where I was tasked with making about 70 jars of cornflake cookies and chocolate chip cookies.
Here’s the recipe for the chocolate chip cookies!
INGREDIENTS:
200 g plain flour
1 tsp baking powder
1 tbsp cocoa powder
150 g butter
120 g castor sugar
1 egg
1 tsp vanilla extract
60 g mini chocolate chips
METHOD:
Preheat oven to 180C.
Sieve flour with baking powder and cocoa powder.
Cream butter with sugar till light and fluffy.
Add egg and vanilla extract and continue to whisk for 2 minutes.
Fold in flour, add in the chocolate chips. Mix well to form a sticky dough.
Shape cookies or use a 3 cm scoop to form cookies. Place on a cookie tray and bake for 20 minutes.
This dough gives about 50 cookies each about 3.5 cm when baked.
Notes:
I used French butter to give a light and crispy cookie. If using unsalted butter, add ¼ tsp of salt to the flour before sieving it.
Use real chocolate chips. There are some that are made from cocoa powder and some other flour which tastes a little plastic. Avoid these please.
Same for cocoa powder – use the real stuff. You can add 2 tbsp of cocoa if you want the cookies to be more chocolatey! Please use good ingredients for the best cookies. It is better to make a small batch of the best tasting cookies rather than lots of inferior tasting cookies.
