Water Melon Curry

What? A curry with water melon, oh my god, it is going to be sweet!

But no it was’t and it was one of the best I have tasted then in Rajasthan, India.

It was a little dry, not as soupy as a curry. But it was so flavourful. As you take a spoonful of the curried melon, explosion of lusciousness only. Yes a little sweet but the other spices get in more. You forget that it is a sweet water melon that is the main ingredient!

I have made many variations since then, either dry curry, or soupy.

Depending on what I am serving with, I do the variations.

Today I wanted something to pour over my rice or just take it as a main meal with bread. In India, they do eat this curry with Phulka which is an indian flat bread or accompaniment to plain white rice. This version of mine is a light and luscious curry with spices, I would say and you can just eat one large bowl of this curry alone! A jamboree of taste! Try it and you will not be disappointed at all. just like me!

Ingredients

  • 5 cups cubed melon
  • 2 tsp chilli powder
  • 1/2 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garlic powder or chopped fresh garlic
  • 1/2 cup milk
  • 1 tsp lime juice
  • Salt to taste
  • coriander leaves and green chilli for garnish (optional)

Directions

  • Puree 3 cups of water melon. Pour into a saucepan and add all the spice powders and the chopped garlic. Let it simmer for about 3 to 5 minutes on medium flame. The liquid will be reduced.
  • Add remaining melon cubes and salt. You can add the milk at this juncture till you have the desired thickness of the curry.
    Taste and add the lime juice if required.
  • Remove and garnish with fresh coriander leaves and/or sliced green chillies if desired.

Notes

  • Add less or more chilli powder and adjust the spices according to your heat as well as spice tolerance.
  • Let the melon cubes be about 2 cm or 2.5 cm cubes. Not too big. It has to be one mouthful.
  • If you prefer to have more cubes of melon, you can increase definitely.
  • You may use full cream milk, coconut milk or even cream. The taste gets better.
  • Lime juice is added to balance the sweetness of the melons. Don’t use too much unless you want to.
  • Enjoy and eat with rice or any flat bread. The taste is definitely amazing and remember there is no oil or any tempering needed!
