Mango Chutney

A must in most Indian homes, and goes well as an appetizer with all meals.

I love to serve this chutney with pappadams or potato crisps as a starter.

I also make variations depending on what I am serving that day. Since I love raw mangoes, I have many recipes up my sleeve, from this sweet mango chutney to Thai mango salad. A simplest way that I enjoy raw mango is to cut them into small cubes, sprinkle salt, sugar and sliced fresh red chillies. Another way is to mix dark soya sauce with sugar and fresh red chilli padi and use this as a dip to dunk the mango slices! If you are not a chilli eater, just omit and follow the rest of it.

By the way, you can also eat the raw mango in many other ways, using them to zing a salad or just grate them into curries and seafood while cooking them.

Now lets come to this north indian chutney recipe, it is u very versatile, it is very delicious as a spread for sandwiches, toasted bread and even burgers. Put it on poached eggs – you will know then!

For years I get my supplies of raw mango from my neighbor and he has such a great tree that blooms at least twice a year, and sometimes more.

The mangoes are beautifully shaped, round and huge, the size of a small pomelo. Usually, I need to use only 1 mango to get about 500g of chutney. Hurry and go to the grocer’s to get your raw mango!

Ingredients

2 cups sugar

1 cup vinegar

6 cups raw mango either shredded large or cubed

1 onion chopped

½ cup raisins

¼ cup ginger shredded

1 garlic clove sliced

1 tsp mustard seeds

1 tsp chilli flakes

Method

Bring to boil vinegar and sugar. Add the rest of the ingredients  cook for 30 mins.

Once cooled – store in jars.

Notes

Reduce the sugar if you prefer a less sweet chutney.

Increase the chilli flakes for more kick. Sometimes I use fresh chilli padi for more heat. You can use cayenne pepper or smoked paprika for its smokey flavor as well.

      Yes definitely, but pl cut down on the sugar apples are not as sour as mangoes.
      I have done with granny smith apples.
